Chestnut-Chocolate Mousse

A rich and decadent dessert perfect not only for the festive season
OK, let’s take stock for a moment.
We are well into the festive season, and there are fresh chestnuts abound at local farmers markets.
I don’t know about you, but for me that calls for a decadent dessert that rings in cozy evenings next to the fireplace.

Rich dark chocolate paired with the earthy flavours of the chestnuts, dark rum and whipped cream is a combination made in heaven.
This is a perfect dessert for many occasions, from your Christmas Eve dinner to any other get together of family and friends. It can be easily made ahead and will keep in the fridge for at least two days.

How to make a delicious chestnut-chocolate mousse
Serves 6
200 g pre-cooked chestnuts
200 ml milk
2 tablespoons sugar
1 vanilla pot
80 g dark chocolate
2 tablespoons dark rum
250 ml whipped cream
For topping
Cocoa powder / chocolate chips
200 ml whipped cream
Add chestnuts, milk, sugar, and vanilla pod to a small saucepan. Bring to boil over medium heat, then reduce the heat and let simmer for 5-10 minutes until the chestnuts are cooked soft, stirring occasionally. Puree the mixture using a handheld blender until smooth. Set aside.
Melt the chocolate in a small bowl floating over simmering water, then take from the heat.
Add the chestnut puree and rum and stir to combine. Set aside to let cool for another about 10 minutes.
Whip the heavy cream until stiff. Carefully fold into the chestnut-chocolate mixture and pour into 6 small bowls or glasses.
Chill for at least 2-3 hours or better overnight.
Just before serving, top with whipped cream and cocoa powder or chocolate chips.
